Quick hummus with za'atar

This za’atar garlic hummus is absolutely delicious and quick to make. Toast sourdough bread or serve with crudites for an ideal vegetarian meze platter.

Ingredients

  • 1 can chickpeas
  • 1 tbsp tahini
  • 1 large clove garlic in pieces
  • ½ tsp zaatar
  • 1/4 lemon
  • sea salt and freshly ground pepper to taste

Instructions

  • Drain the chickpeas in a bowl, retaining their water.
  • In a blender or food processor, add the chickpeas, tahini, garlic and zaatar to a blender or food processor. Whizz for about a minute until you have a smooth and creamy texture.
  • If needed, add a tablespoon of the chickpea water to the mixture for more consistency. Transfer the hummus in a bowl. Add lemon juice and season to taste.
