This za’atar garlic hummus is absolutely delicious and quick to make. Toast sourdough bread or serve with crudites for an ideal vegetarian meze platter.
Quick hummus with za’atar
Ingredients
- 1 can chickpeas
- 1 tbsp tahini
- 1 large clove garlic in pieces
- ½ tsp zaatar
- 1/4 lemon
- sea salt and freshly ground pepper (to taste)
Instructions
- Drain the chickpeas in a bowl, retaining their water.
- In a blender or food processor, add the chickpeas, tahini, garlic and zaatar to a blender or food processor. Whizz for about a minute until you have a smooth and creamy texture.
- If needed, add a tablespoon of the chickpea water to the mixture for more consistency. Transfer the hummus in a bowl. Add lemon juice and season to taste.
